If you’re reading this and live in Michigan, you’ve noticed that Fall has officially arrived! It took awhile for the weather to figure out what it wanted to do, but I think the blustery, damp, and chilly days are here to stay. I’m pretty sure I have a jacket, sweatshirt, rain coat, winter coat, and fleece all in the backseat of my car right now! Yes, those are all different things and totally necessary during this time of year :)  If there’s anything I’ve had to come to terms with living in a State with 4 moody seasons, it’s that you can’t fight it. Turmeric Tofu Tussle

My clients inspire me every.damn.day. They are more determined, tenacious, and brave than most. They’ve decided to make their health a priority and make it work for them. Some want to be a good role model for their children, some are sick and tired of being sick and tired, and some want to fit into clothes they’ve always wanted to wear. Their goals are theirs, and it’s my job to support, encourage, and hold them accountable.

Because of some pretty serious, life threatening health issues one of my clients dealt with previously, she is really interested in the Eat to Live plan by Joel Fuhrman. While I don’t push or recommend any specific diet, she came to me determined that this was something she wanted to stick with. More specifically, she wanted a breakfast with protein that didn’t include animal products, oil, or salt (three no-no’s in the Eat to Live plan).

My husband and I swear by our morning tofu scramble. Warm, filling, and delicious, we can make a big batch on Sunday and have it for the week. Usually we saute the veggies and tofu in coconut oil and add salt for flavor, in addition to all the other yummy spices. I mentioned this to my client and she thought it also sounded amazing and wanted the recipe!

“But it has oil and salt in it”, I thought. How the heck do you cook a scramble without these crucial ingredients?!

Well, I got to work.

And the result was warm, filling, delicious, and dare I say...better?! I can’t wait to share this with my client so she can make it at home and feel confident in starting her day off with an easy, savory, and satisfying breakfast.

Why Turmeric Tofu Tussle? Well, a tussle is a “..vigorous struggle, typically in order to obtain or achieve something”. I don’t know if is was a vigorous struggle to create this recipe, but my client's health history certainly has been. She has overcome so much and is achieving the life she wants for herself. I’m grateful she came into my life and this one’s for her.

Turmeric Tofu Tussle

1 hour, includes baking time
Makes: 4 ½ cups

Ingredients:

1 cup chopped onion, whatever kind you like best
1 ½ chopped mushrooms
3 cups chopped cauliflower
1 block of tofu, cubed
1 tsp garlic powder
½ tsp turmeric powder
¼ tsp black pepper
3 T nutritional yeast
2 T spicy brown mustard
3 T low sodium vegetable broth

Preheat oven to 400 and line two baking sheets with parchment paper.

Wrap block of tofu in a piece of paper towel and place a heavy jar on top to help release the water. Set aside. Chop up all vegetables. Place vegetables on one of the baking sheets.

Remove paper towel from tofu and slice it into cubes. Place cubes on the other lines baking sheet. Bake tofu in oven for 35 mins, flipping cubes halfway through.

While tofu is baking, make the sauce. Put all spices, broth, and mustard in a large bowl and whisk together. Set aside.

When there is 10 mins left for the tofu, put the vegetables in the oven for the last 10 minutes.

When both the tofu and vegetables are done and still warm (tofu should be slightly crispy on the outside and vegetables should be cooked but slightly firm), pour them into the bowl with the sauce. Combine.

A few months ago I posted this TED Talk  and people loved it. I can understand why. We can all agree that we give too many f*cks and it leaves us stressed out and exhausted at the end of the day!
